Your training.
The aim of this plan is to explain how our business works. Your training has been broken down into
different parts so you get a good understanding of our sections and systems.
During your training you will be assessed on your learning and understanding. At the end of your training
you will be assessed on what you have learnt so we can measure progress and identify areas that may need
further development.
Depending on your job role you will have a 3-6 week training programme. The training will be in a trusted
training site.
The Area Chef will be in your site weekly, so take the opportunity to get to know them.
Week 1-3
Section Training.
After your induction, you will spend
your first few weeks being trained
on all the various sections in our
kitchens. You will do a minimum of 2
days on Hot and Cold Larder, Sauce,
Pastry and Grill & Breakfast.
We don't do this to teach you to
cook - you can do this already!
The purpose of this is for you to
learn our dishes and gain a full
working knowledge of how we run
sections.
Weeks 4-5
Section and training HC,
SSC and SC.
The last week will be spent learning
our management systems and
running the passes, you will start by
shadowing the senior team of your
training site, also the Area Chef will
be with you to train you.
Then you will be expected to lead -
culminating in you running a service.
Week 6
Management
& Systems Training.
Apart from learning the menu and
how the sections work, you will
spend time with the senior chefs to
understand our ordering and delivery
system, kitchen SOPs (Standard
Operating Procedure) HACCP, and
food hygiene and health and safety
procedures.
