Opening Checklist, Every day we complete a set of opening checks first thing in the morning, these
checks are aimed at making sure that the kitchen is ready to open correctly for the day ahead, to be
sure any structural or maintenance issues are identified early and can be dealt with straight away.
Closing Checklist, Every evening before we leave the kitchen we do a closing check list to make sure that everything
is cleaned, all the gas equipment is switched off correctly and that all food areas have been cleaned and sanitised to
our standard. We check that the Fridges and Freezers are working and locked where needed, check all the food is in
date and any out of date food is discarded and recorded on wastage.
