Breakfast.
The breakfast section can be one of the toughest and fast paced sections in the kitchen, the service is quite short
and our guests usually come to dine at the same time! Added to this is the large variety of dishes we offer and all our
egg dished need to be cooked to order. Expert cooking skills and organisation is required to run the breakfast section
successfully and to our exceptionally high standards'.
Management notes.
Make sure the breakfast chefs are monitored and managed at all times, to ensure the section is set up on time and
that all precooked products are to spec and HACCP procedures have been followed.
