The following section gives you an insight into our systems and processes, it is important that you make
yourself aware of all of these during your training period.
Private Dining Room (PDR).
We have a specific private dinning team in our Head Office that looks after the bookings for these special
events each team member looks after 4-7 sites so they know them in great detail.
They will take the booking and create a function sheet that will be updated when necessary up to the
day of the event.
The communication between the sites Head Chef, FOH team and the head office team is very important, for the smooth
running of an event. These events can be made totally bespoke to the guests requirements, and the team
in Head Office will always run past the Head Chef and Kitchen.
The PDR's have their own special menus that can be found on the restaurants website. Typically, the sites have the
following menus and variations each with a different pricing:
• Breakfast - menu A, B or C
• Canapé and Bowl Food menu
• Express Lunch menu
• Afternoon Tea menu
• 7 Private Dining menus that can be ordered for lunch or dinner
All the dishes on the PDR menu are dishes on the restaurant's current menu, but are a PDR version so slightly easier to
complete for a large party at the same time, all specs can be found on the HUB Bookshelf > Food > Ivy Recipes > PDR.
