Food Bible.
The training team produce a food Bible for all new dishes in the business, this is to communicate the dishes in a
standardised way so that everyone has all the same information. These are uploaded to The Hub and can be found
at Bookshelf > Food > Restaurant Food Bible for the Main Menu or Bookshelf > Food > Set Menu Food Bibles.

Restaurant & kitchen briefs.
- The MEP for the new dishes must now be complete,
- The till system will be changed overnight and the new dishes will appear.
- First thing in the morning the whole menu needs to be put through the tills and sent to the kitchen to
make sure that they are going to the correct sections and appear correctly on the kitchen tickets. Any
discrepancies should be sent to the Exec Chef & Area Chef for them to decide if it is an error or not.
Every site must do at least 1 new menu cook off where all the FOH are invited to learn more about the new dishes
coming on that menu, larger sites with large FOH teams may need to do more cook offs, this is a great time to get a
consistent training of all the new dishes for the FOH to learn, also a great time for the Chefs to practice cooking the
dishes as well.
For the next few weeks, the new menu dishes must be cooked and tried by the Kitchen and FOH team at briefs before
breakfast, lunch and dinner service. This is to update and confirm everyone's knowledge is up the standard required.
